These 100% grassfed/finished ribeyes are double aged, aged once "on the hoof" giving them an extra 12-16 months to get that fine inter-muscular fat over commodity-grocery store beef, and then they dry age for 21+ days so the natural enzymes can make them nice and tender. 

These ribeyes almost always grade PRIME or PRIME +.  YUM. 

Rich in grass fed flavor, the brisket flat is the leaner of the two brisket cuts. Perfect for slow cooking in the smoker or oven, and the best cut for making corned beef.
